Description

In Mexico, there are hundreds of recipes for squash, and almost every chef has their own method of preparation and spice blend. This dish has an unusual exotic flavor, and it can also be prepared in advance. Perhaps the reheated dish will be even more enjoyable for many the next day.

Ingredients

  • Courgette 25 oz
  • Tomatoes 10 oz
  • Green peppercorns 6 pieces
  • Cilantro 4 stems
  • Fresh Mint 2 pieces
  • Cinnamon 0.3 pieces
  • Ground clove 4 pieces
  • Mild Chili Spice 2 pieces
  • Sour Cream 5 oz
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the zucchini into wedges.

Step 2

Peel the tomatoes and remove the seeds, then cut them into wedges.

Step 3

Place all the ingredients in an oven-safe dish. Cover tightly with a lid and cook on low heat for 30 minutes, stirring the vegetables occasionally. The zucchini should be soft and fully absorb the sour cream, with no liquid left in the dish. Do not add spices to the hot dish.
