Salad with Beans, Peaches, and Onions
Ingredients
- Olive Oil 1 cup
- Onion 1 head
- Peaches 15 oz
- Fresh Chopped Oregano Leaves 1 tablespoon
- White Balsamic Vinegar 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Green Beans 30 oz
Step-by-Step Guide
Step 1
Heat 3 tablespoons of oil in a large skillet over medium heat. Add the onion and sauté for 7-10 minutes until caramelized. Add the peaches and oregano; sauté until the peaches are soft, about 5-7 minutes. Mix the remaining oil with vinegar, salt, and pepper in a large bowl; add the onion and peaches and set aside.
Step 2
Bring salted water to a boil in a large pot; blanch the beans for 1-2 minutes until tender. Place in a bowl of ice water. Drain and transfer the beans to the bowl with the peaches; toss gently, shaking the bowl.
