Pappardelle with Mint, Peas, and Lemon

Ingredients
- Pappardelle Pasta 5 oz
- Frozen Green Peas 5 oz
- Shallot 1 piece
- Lemon 1 piece
- Fresh Mint 8 leaves
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Bring a pot of water to a boil and add salt to taste. Once it boils, add the pappardelle. Cook for 2 minutes less than the package instructions.
Step 2
Meanwhile, cook the peas. In a skillet, sauté the finely chopped shallot in olive oil. When the pasta is ready, add it to the sautéed shallot, along with the peas and a tablespoon of the water used to cook the pappardelle.
Step 3
Add some grated lemon zest, mint leaves, and pepper to taste. Mix all the ingredients well and serve immediately.
