Ingredients
- Courgette 2 pieces
- Peeled Cooked Shrimp 5 oz
- Miso Paste 0 oz
- Mayonnaise 0 oz
- Olive Oil 0 fl oz
- Lemon 1 piece
- Buckwheat Groats 1 tablespoon
- Parsley 0 oz
- Cayenne Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Cut the zucchini in half and scoop out the seeds and flesh with a spoon to create small boats. Drizzle with oil and place in the oven for 15 minutes at 355°F.
Step 2
Mix the light miso paste with soy mayonnaise, honey, lemon juice, and shrimp.
Step 3
Remove the zucchini from the oven, fill the boats with the pasta and shrimp mixture, and return them to the oven for another fifteen minutes. When serving, sprinkle with parsley.
