- Zucchini 15 oz
- Feta cheese 5 oz
- Herbs to taste
- Ground Dried Garlic 1 tablespoon
- Coconut Oil 2 tablespoons
- Lemon Juice to taste

Step 1
Preheat the oven. Set the oven to 355°F.
Step 2
Roast the zucchini. In a large bowl, place the roughly chopped zucchini, garlic powder, and add the coconut oil. Mix thoroughly. Spread in a single layer on a deep baking tray. Roast for 20–25 minutes. When the zucchini turns golden brown, remove from the oven and transfer to a serving bowl. Sprinkle with herbs, feta cheese, chopped parsley, add lemon juice, sea salt, and red pepper (if desired).
