Zucchini stuffed with mushrooms
Ingredients
- Pickled Chanterelles 2 pieces
- Potato 1 piece
- Cheese Spread 10 oz
- Courgette 1 piece
- Salt to taste
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Cut the zucchini in half and scoop out the flesh from the center.
Step 2
Chop the champignon mushrooms, sauté them in olive oil, then add the diced zucchini flesh and tomato, and season with salt. Sauté for 5 minutes.
Step 3
Salt the inside of the zucchini and fill it with the vegetable mixture. Wrap the zucchini in foil.
Step 4
Bake the zucchini at 355°F in the oven for about 30 minutes. Five minutes before it's done, sprinkle the zucchini with grated cheese.
