- Parsley ½ bunch
- Garlic 1 clove
- Toasted Sesame 1 tablespoon
- Sesame Oil 1 tablespoon
- Natural Yogurt 2 tablespoons
- Ground Black Pepper to taste
- Salt to taste
- Parmesan Cheese to taste
Step-by-Step Guide
Step 1
Grate the zucchini into thin strips (or cut into long thin strips with a knife). Pour boiling water over it and let it sit for 1 minute — this will soften the zucchini slightly while keeping it a bit crunchy. Drain in a colander.
Step 2
In a blender, blend the parsley, garlic, sesame seeds, oil, and yogurt, then season with salt and pepper.
Step 3
Place the zucchini on a plate, drizzle with the sauce. Sprinkle with grated Parmesan.
