- Young Carrots 0 lbs
- Olive Oil 3 tablespoons
- Cumin Seeds 2 teaspoons
- Cilantro ½ bunch
- Salt to taste

Step 1
Trim the green tops of the carrots, leaving 1–2 cm tails, and wash them. Place in a pot of boiling water and cook on low heat for 2–3 minutes. Drain in a colander.
Step 2
Preheat the oven to 390°F. Arrange the carrots in a large baking dish, drizzle with olive oil, sprinkle with cumin, and season with salt. Roast for 20–25 minutes until the carrots are golden brown.
Step 3
Serve garnished with finely chopped cilantro.
