  • Shallot 0 oz
  • Lemon 1 piece
  • Walnuts 1 tablespoon
  • Orange zest 1 tablespoon
  • Lime Juice 1 tablespoon
  • Salt to taste
  • Ground Black Pepper to taste
  • Soy Vanilla Milk ½ cup
  • Chopped Sage Leaves 2 tablespoons
  • Olive Oil 1 tablespoon
  • Meyer Lemon Juice 1½ teaspoons
  • Walnuts 0 oz
  • Chopped Sage Leaves 2 tablespoons
  • Sun-Dried Tomatoes 4 pieces
  • Potato 1 piece
  • Spring roll wrappers 12 pieces
  • Vegetable Oil to taste

Step-by-Step Guide

Step 1

In a large bowl, combine the avocado, apples, chopped shallot, lemon mint, walnut oil, lime zest, and lime juice, seasoning with salt and pepper. Cover the tartar with plastic wrap and refrigerate until ready to use (no more than 2 hours).

Step 2

In a small bowl, mix the yogurt, chives, olive oil, lemon juice, seasoning with salt and pepper. Cover the sauce with plastic wrap and refrigerate until ready to use (no more than 2 hours).

Step 3

In a blender, process the walnuts, parsley, and both types of tomatoes until smooth, seasoning with salt and pepper. Transfer the mixture to a small bowl. Place 2 teaspoons of the prepared mixture in the center of each wonton wrapper, wet the edges of the wrappers. Fold the wrappers like candy wrappers, twisting the ends.

Step 4

Pour enough vegetable oil into a medium-sized pot (the depth should be 5 cm). Attach a deep-fry thermometer and heat the oil to 180˚C. Add the wontons and fry until golden brown for about 2 minutes. Use a slotted spoon to remove the wontons from the oil and transfer them to paper towels, seasoning with salt.

Step 5

Before serving, divide the tartar among 4 plates, spooning in the sauce. Arrange the wontons on the plates and serve hot.
