Description
Chinese dumplings prepared in our kitchen by Chef Michael Smith from the restaurant 'The Bistro'.
Ingredients
- Wheat Flour 5 oz
- Whole egg 3 pieces
- Grated Ginger Root 0 oz
- Chinese green beans 0 oz
- Champignons 5 oz
- Onion 0 oz
- Garlic 4 cloves
- "Petelinka Thigh Fillet" 5 oz
- Peeled Cooked Shrimp 0 oz
- Vegetable Oil 5 fl oz
- Fish Oil 2 spoons
- Soy Sauce 1 tablespoon
- Oyster Mushrooms 0 fl oz
- Chicken Seasoning 0 oz
- Cilantro 0 oz
- Scallions 0 oz
- Chicken Broth 0 qt
- Chili Oil to taste
- Salt to taste
- White Pepper (whole) to taste
- Malasan 0 oz
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
In a large bowl, combine the flour, egg yolks, and a generous pinch of salt. Use a spoon to rub the flour into the yolks until the mixture resembles uniform breadcrumbs.
Step 3
Gradually add water and start kneading the dough with your hands. When the dough comes together into a single ball, transfer it to a table or board and continue kneading, pressing it down against the surface.
Step 4
The dough should be smooth and uniform. Wrap the finished dough in plastic wrap and refrigerate for 30 minutes.
Step 5
Finely chop the onion into small cubes.
Step 6
Crush the garlic and then chop it finely.
Step 7
Chop the leaves of the Chinese cabbage into small pieces.
Step 8
Peel and finely chop the ginger.
Step 9
Chop the green onions and cilantro.
Step 10
Finely chop the mushrooms.
Step 11
The shrimp need to be prepared in a special way: place the shrimp on a cutting board and use the flat side of the knife to flatten it on the board, then chop it into small cubes.
Step 12
Pass the chicken through a meat grinder.
Step 13
In a skillet, heat the oil over medium-low heat. Add the onion, garlic, and ginger, and sauté until the onion becomes translucent.
Step 14
Add the mushrooms, increase the heat, and sauté, stirring, until all the moisture released by the mushrooms has evaporated.
Step 15
Add the cabbage and herbs, and continue sautéing for another 4–5 minutes. Allow the cooked vegetables to cool.
Step 16
Combine the ground chicken, shrimp, and vegetable filling, then add oyster sauce, white pepper, chicken powder, sesame oil, soy sauce, and fish sauce. Mix everything well.
Step 17
Dust the work surface with flour and roll out the dough into a rectangle no thicker than 1 mm.
Step 18
Cut the dough into squares measuring 5 cm on each side.
Step 19
Place about 1 teaspoon of filling on a square of dough, fold it in half to form a triangle, and seal the corners by wrapping the dough around your finger.
Step 20
Bring the broth to a boil and add the wontons. Cook for 8–10 minutes. During the initial cooking phase, stir them occasionally to prevent them from sticking together.
Step 21
Serve the wontons in the broth they were cooked in, adding chili oil and a bit of fresh herbs.
