Ingredients

  • Spanish onions 5 heads
  • Wild rice 1 cup
  • Red Wine Vinegar ½ tablespoon
  • Olive Oil 2 tablespoons

Step 1

Chop the onion and sauté it in oil, stirring constantly, for 1 minute. Add 1 cup of water and vinegar, and bring to a boil, stirring until the onion turns pink.

Step 2

Drain the liquid into a separate container and add enough water to make 2.5 cups of broth. Bring this liquid to a boil in a pot, add the rice, and cook on low heat covered for 30 minutes. Then add the onion and cook for another 4 minutes.
