Ingredients

  • Wild rice 1 glass
  • Lime 1 piece
  • Tomatoes 2 pieces
  • Coconut Milk 15 fl oz
  • Olive Oil to taste
  • Ocean salt to taste
  • Grated Ginger Root 1 piece

Step-by-Step Guide

Step 1

Rinse the wild rice in cold water and add it to boiling water, using a ratio of 1 cup of rice to 2–2.5 cups of water. Cook on low heat for about 40 minutes.

Step 2

Peel a piece of ginger about 3 cm in size, chop the tomatoes, and blend them together with lime juice and coconut milk.

Step 3

Transfer the cooked rice (the grains have softened and slightly opened) to a hot skillet with a small amount of olive oil. Pour in the prepared coconut sauce, add salt, and simmer on low heat for about 10–15 minutes. The rice will gradually absorb the sauce and open up even more.
