Wild Boar Cutlets
Ingredients
- Wild Boar Fillet 0 lbs
- Shallot 2 pieces
- Dill 1 bunch
- Chicken Egg 1 piece
- White bread 1 slice
- Milk 5 fl oz
- Chicken Broth 5 fl oz
Step-by-Step Guide
Step 1
Wash the boar meat, cut it into pieces, and pass it through a meat grinder.
Step 2
Sauté the shallots until golden.
Step 3
Soak the slice of bread in milk.
Step 4
Pass the shallots, bread, and herbs again through the meat grinder with the minced meat (the mixture should be very tender).
Step 5
Add the egg and a little meat broth (or water if you don't have broth) to the mixture.
Step 6
Season with salt and pepper.
Step 7
Before frying the cutlets, make sure to beat the minced meat (I baked them in the oven, and they turned out just as good, but healthier).
