Description
Wiener Chicken, also known as Backhendl. A timeless recipe. Pieces of chicken coated in breadcrumbs and deep-fried.
Ingredients
- Poultry 1 piece
- Vegetable Oil 0 qt
- Wheat Flour 10 oz
- Chicken Egg 3 pieces
- Breadcrumbs 10 oz
- Parsley 5 oz
- Lemon 2 pieces
- Salt to taste
- White Pepper (whole) to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Cut the chicken into 8 pieces: drumsticks, thighs, and halved breasts.
Step 3
Remove the skin, and season with salt and pepper. The carcass and wings can be saved for another dish.
Step 4
Place the flour, eggs, and breadcrumbs in three separate bowls.
Step 5
Dip the pieces of chicken alternately in flour, eggs, and breadcrumbs, shaking off any excess.
Step 6
Heat vegetable oil to 355°F. Carefully lower the chicken into the oil and fry for 13-15 minutes, until they turn a golden brown.
Step 7
Then place them on paper towels and let the excess fat drain off.
Step 8
Separate the parsley into leaves.
Step 9
Sauté it in oil for 3 minutes.
Step 10
Sprinkle with pieces of chicken and serve with a wedge of lemon.
