Whole Wheat Pasta with Vegetables and Cheese
Ingredients
- Spaghetti 10 oz
- Courgette 2 pieces
- Eggplants 1 piece
- Tomatoes 3 pieces
- Onion 1 head
- Garlic 3 cloves
- Olive Oil 3 tablespoons
- Feta cheese 5 oz
- Basil to taste
Step-by-Step Guide
Step 1
In a large pot, bring salted water to a boil and cook the pasta according to the package instructions. Drain the water and set the pasta aside.
Step 2
In a large skillet, heat the olive oil. Add the onion and garlic, sauté until softened (about 5 minutes).
Step 3
Add the eggplant and sauté for about 10 minutes, until it becomes soft and slightly browned. Add the zucchini and cook for another 5–7 minutes.
Step 4
Add the tomatoes to the skillet and cook for another 5–7 minutes, until they become soft and release their juices.
Step 5
Add the cooked pasta to the vegetables in the skillet, mix well. Season with salt and pepper to taste.
Step 6
Serve the pasta hot. Sprinkle with crumbled feta cheese and fresh basil.
