White rice with vegetables and egg
Ingredients
- Rice 20 oz
- Vegetable Oil 5 fl oz
- Chocolate eggs 4 pieces
- Onion 1 head
- Grated Ginger Root 2 tablespoons
- Frozen Vegetable Mix 'Lecho' 10 oz
- Soy Sauce 1 tablespoon
Step-by-Step Guide
Step 1
Bring 2 liters of water to a boil, add the rice, stir, and cook for 10 minutes over high heat, then drain in a colander.
Step 2
Spread the cooked rice on a large baking sheet and let it cool (gently stir 2-3 times with a fork). Heat 50 ml of oil in a large wok, crack 2 eggs and scramble quickly.
Step 3
Add half of the chopped onion, 1 tablespoon of ginger, 1 teaspoon of ground pepper, and sauté for 2-3 minutes.
Step 4
Add half of the frozen vegetables and sauté for another 5 minutes, stirring.
Step 5
Add half of the cooled rice and simmer for another 5 minutes, stirring, until all the rice is heated through.
Step 6
Drizzle with 1/2 tablespoon of soy sauce and mix, adding a pinch of salt if needed.
Step 7
Wash the wok and repeat the same steps with the second half of the ingredients.
