  • Frankfurter sausages 6 pieces
  • Pork Blood 10 oz
  • Bacon 2 pieces
  • Bay leaf 1 piece
  • Garlic 1 clove
  • Olive Oil 3 tablespoons
  • Butter 0 oz
  • Salt to taste
  • Parsley 2 stems
  • White Beans 20 oz

Step-by-Step Guide

Step 1

Place the beans in a pot and cover with water. Bring to a boil over low heat, then drain. Return the beans to a clean pot and cover with cold water, bring to a boil again and simmer for 15 minutes. Add 250 ml of cold water, return to heat and simmer for another 15 minutes. Repeat this process one more time. Add the ham, bacon, and bouquet garni, and cook for another 1.5 hours until the beans are almost soft. If necessary, add more cold water to prevent the beans from drying out.

Step 2

Towards the end, heat the oil in a skillet, add the fresh sausages, and cook over low heat, turning until they are browned.

Step 3

Season the beans with salt and add the frankfurter sausages to the pot, cooking for another 10 minutes. Remove the bouquet garni.

Step 4

In a large skillet, melt the butter and lightly sauté the parsley. Using a slotted spoon, transfer the beans to this skillet and mix. Using a slotted spoon, transfer the beans to the oil with parsley and combine.

Step 5

Cut the ham into 6 pieces and slice the bacon into thirds.

Step 6

Divide the beans among six warmed plates. Add a piece of ham, a piece of bacon, a frankfurter sausage, and a browned sausage to each plate. Serve immediately.
