Warm pasta salad with chicken and spinach
Ingredients
- Penne rigate 10 oz
- Butter 5 oz
- Skin-On Chicken Breasts 20 oz
- Dry White Wine 5 fl oz
- Thyme 2 pieces
- Marinated cherries 10 oz
- Orange Bell Peppers 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 1 tablespoon
- Sun-Dried Tomatoes to taste
- Paprika to taste
- Herbes de Provence to taste
- Fresh basil leaves 0 oz
Step-by-Step Guide
Step 1
Cook the pasta.
Step 2
Cut the chicken breasts in half. Mix salt, paprika, sun-dried tomatoes, and black pepper, and season the chicken with this mixture.
Step 3
Sauté the chicken breasts on both sides in butter until cooked through. Add the wine, 2 sprigs of thyme, and reduce until the sauce thickens.
Step 4
Clean the bell pepper and cut it into pieces. Wash and dry the spinach. If using baby spinach, add it whole; if not, tear it by hand.
Step 5
Season the tomatoes with salt, add oil, herbs de Provence, and place them in a preheated oven at 355°F for about 15–20 minutes.
Step 6
Optionally, peel the cooked tomatoes.
Step 7
Mix the cooked pasta with spinach, tomatoes, bell pepper, and add the juice released from the roasted tomatoes. Toss everything together. Serve in portions.
Step 8
Cut the chicken breast into pieces. Place it on the salad and drizzle with the white wine sauce.
