
Warm Curry of Soybeans and Red Lentils

Description
Use olive oil labeled 'pomace' for cooking, not 'virgin' or 'extra virgin'.
Ingredients
- Ground coriander 1 bunch
- Soy Meat 1 cup
- Lentils 1 cup
- Turnips 2 pieces
- Onion 1 piece
- Garlic 3 cloves
- Red Curry Powder 1 tablespoon
- Paprika 1 teaspoon
- Grated Ginger Root 1 tablespoon
- Olive Oil 1 tablespoon
- Ground Black Pepper a pinch
- Salt to taste
- Water 4 cups
Step-by-Step Guide
Step 1
Soak the soybeans in advance (overnight). In the morning, drain and rinse them.
Step 2
Rinse the lentils. Finely chop the onion, garlic, and cilantro. Cut the carrots into strips.
Step 3
Heat the oil in a skillet, add the onion, and sauté for 3–5 minutes over low heat.
Step 4
Add the curry powder (1 tablespoon for a mild flavor, use 2 tablespoons for a spicier taste) and sauté for another minute.
Step 5
Add 0.5 cups of water, carrots, ginger, paprika, and garlic, and cook for another 5–6 minutes, then remove from heat.
Step 6
Pour the remaining 3.5 cups of water over the soybeans and bring to a boil.
Step 7
Add the lentils and the contents of the skillet, and cook for 15–20 minutes until the beans and lentils are tender.
Step 8
Add the cilantro, pepper, season with salt, and cook for another minute. Serve warm.
