
Vegetarian Zucchini Casserole

Ingredients
- Zucchini 4 pieces
- Onion 2 pieces
- Eggs 4 pieces
- Garlic 5 cloves
- Dried Basil to taste
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
- Sour Cream to taste
Step-by-Step Guide
Step 1
Dice the onion and sauté it in a small amount of olive oil until golden brown.
Step 2
While the onion is sautéing, grate the zucchini on a coarse grater and squeeze out the excess moisture.
Step 3
Add half of the grated zucchini to the onion and simmer on low heat until all the liquid evaporates, seasoning with salt to taste.
Step 4
Whisk the eggs (with a whisk, fork, or mixer — whatever is convenient :) ) and add the second half of the grated zucchini (well-squeezed :) ). Mix well, add basil to taste, season with salt and pepper, and add the sautéed onion and zucchini mixture. Stir quickly to prevent the eggs from setting :)
Step 5
Grease a baking dish with olive oil and fill it with our mixture. I covered it with a lid for better baking :)
Step 6
Place in the oven at 355°F (about 350 degrees Fahrenheit) for about 40 minutes until a golden crust forms around the edges of the casserole.
Step 7
Wait for it to cool slightly, serve on plates, and add some sour cream :)
