Vegetarian dolmas with brown rice and mushrooms

Ingredients

  • Grape Leaves 50 pieces
  • Brown Rice 1 cup
  • Mushrooms 30 oz
  • Chopped Parsley ½ cup
  • Paprika ½ cup
  • Sea Salt to taste
  • Ground Black Pepper to taste
  • Dried thyme leaves 1 teaspoon
  • Bay leaves 3 pieces
  • Ground coriander ½ teaspoon
  • Grated Ginger ¼ teaspoon
  • Olive Oil 2 tablespoons
  • Onion 1 head

Step-by-Step Guide

Step 1

Chop the mushrooms and onion in a blender and set aside. Heat the oil in a large pot over medium heat. Add the mushroom and onion mixture to the pot and sauté for another 10 minutes.

Step 2

Drain the rice and add it to the pot along with 1 cup of water. Stir, bring to a boil, and cook for 10 minutes or until all the liquid is absorbed. Add the spices.

Step 3

Remove the pot from heat. Add the chopped parsley. Allow the mixture to cool for 10 minutes.

Step 4

Wrap 1 tablespoon of the filling in a grape leaf. Repeat with all the leaves.

Step 5

Take a large pot and place grape leaves at the bottom. Place the rolled grape leaves on top. Then add the bay leaves. Cover with the remaining grape leaves. Pour in water to cover all the leaves.

Step 6

Preheat the oven to 200°C (392°F). Bake for 1 hour. Check every 20 minutes to see if the water has evaporated and add water if necessary. Add tomato paste 15 minutes before the cooking time is up.
