Vegetarian Chickpea Patties (Falafel)
Ingredients
- Cilantro 1 bunch
- Chickpea 1 cup
- Bulgur 3 tablespoons
- Onion 1 piece
- Garlic 3 cloves
- Paprika 1 tablespoon
- Turmeric 1 tablespoon
- Salt to taste
- Red Long Chili Peppers to taste
- Toasted Cumin Seeds ½ teaspoon
Step-by-Step Guide
Step 1
Soak the chickpeas overnight (for at least 6 hours).
Step 2
Drain the water, pass the chickpeas through a meat grinder with a fine mesh twice (or use a blender), mixing them with bulgur (if you don't have bulgur, breadcrumbs from one slice of white bread will work).
Step 3
Add finely chopped onion (I sautéed it a bit in aromatic oil, see my recipes).
Step 4
Add the herbs and garlic.
Step 5
Crush the pepper, turmeric, and paprika with coarse salt, and knead the mixture well.
Step 6
Roll the mixture into small balls with your palms, slightly flatten them, and fry in hot oil at 390°F until golden brown (although I don't like too much oil — I fried them this way).
Step 7
Serve in pita (Arabic flatbread) or lavash: spread sauce inside, add a lettuce leaf, onion rings, tomato slices, cucumbers, and 4-5 falafels.
