Description

Vegetarian chickpea burger with yogurt sauce

Ingredients

  • Chickpeas 5 oz
  • Onion 1 piece
  • Garlic 4 cloves
  • Carrot 1 piece
  • Egg 1 piece
  • Feta cheese 5 oz
  • Breadcrumbs 0 oz
  • Tomato 1 piece
  • Cucumber 1 piece
  • Whole Wheat Buns 5 pieces
  • Young Spinach 0 oz
  • Olive Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste
  • Dill 1 sprig
  • Natural Yogurt 1 container

Step-by-Step Guide

Step 1

Soak the chickpeas in cold water for at least 4 hours, preferably overnight. Drain the water, rinse the chickpeas, place them in a pot with water, and bring to a boil. Reduce the heat and cook the chickpeas for 1.5 hours until tender. Add a little salt at the end of cooking.

Step 2

Chop the onion and 2 cloves of garlic, sauté in olive oil until translucent.

Step 3

Transfer the cooked chickpeas to a colander and let them drain well. In a blender, combine the chickpeas, onion and garlic mixture, grated carrot, feta, egg, and breadcrumbs.

Step 4

Blend the ingredients until smooth, seasoning with salt and pepper.

Step 5

Divide the mixture into 4-5 portions and form into burgers. I made 5 patties.

Step 6

Fry the burgers in olive oil for 6-7 minutes on each side or until cooked through.

Step 7

Slice the buns in half. Toast them in a skillet. Prepare the sauce: mix the yogurt with finely chopped garlic (2 cloves) and herbs. On the bottom halves of the buns, layer a bit of sauce, spinach leaves, a slice of tomato (choose a larger tomato!), a patty, cucumber (sliced into rounds), and a bit more sauce.

Step 8

Enjoy your meal!
