- Onion 1 head
- Garlic Scapes 3 cloves
- Smoked Paprika 1 teaspoon
- Cumin ½ teaspoon
- Dried thyme leaves 1 tablespoon
- Carrot 3 pieces
- Celery 2 stalks
- Fresh Red Pepper 1 piece
- Fresh Yellow Pepper 1 piece
- Canned tomatoes 30 oz
- Lentils 10 oz
- Vegetable Broth 10 fl oz
- Young zucchini 2 pieces
- Thyme 2 stalks
Step-by-Step Guide
Step 1
Heat the oil in a large heavy-bottomed skillet. Add the onion and sauté until softened, about 5-10 minutes.
Step 2
Add the garlic, spices, dried thyme, carrot, celery, and peppers, and sauté for 5 minutes.
Step 3
Add the tomatoes, broth, zucchini, fresh thyme, and cook for 20-25 minutes.
Step 4
Remove the thyme sprigs. Add the lentils and bring to a boil again. Serve with basmati rice.
