Vegetarian Borscht
Ingredients
- Potatoes 3 pieces
- Carrot 1 piece
- Beet 1 piece
- Lemon 1 wedge
- Bell pepper 1 piece
- Khmeli-Suneli (Georgian spice mix) to taste
- Ground Black Pepper to taste
- Onion 1 piece
- Fresh Herbs to taste
- Olive Oil 2 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Chop the onion, carrot, beet, and bell pepper into small pieces.
Step 2
First, sauté the onion until golden brown in olive oil.
Step 3
Then, sauté the bell pepper, beet, and carrot with the onion, adding salt and a lemon wedge cut into 4 pieces for the last 5 minutes — for a total of 10 minutes.
Step 4
Put the potatoes to boil, and when it boils, add salt, pepper, khmeli-suneli, and the sautéed vegetables. Cook for 15 minutes.
Step 5
Sprinkle the finished borscht with fresh herbs (parsley, dill, basil).
Step 6
Serve hot.
