Ingredients
- Balsamic Vinegar 2 tablespoons
- Dijon Mustard 1 teaspoon
- Olive Oil 1 cup
- Garlic 3 cloves
- Chopped Fresh Thyme 2 teaspoons
- Chopped Basil Leaves 1 teaspoon
- Red Onion 2 heads
- Yellow bell pepper 1 piece
- Red Bell Pepper 1 piece
- Orange Bell Pepper 1 piece
- Eggplants 15 oz
- Zucchini 10 oz
- Courgette 10 oz
- Salt to taste
Step-by-Step Guide
Step 1
Mix the vinegar with the mustard in a medium bowl. Gradually whisk in the oil. Add the garlic, thyme, and basil, and mix well. Season with salt and pepper to taste.
Step 2
The dressing can be prepared 1 day in advance. Cover and refrigerate.
Step 3
Preheat the oven to 230°C (450°F). In a large bowl, combine the onion and the next 6 ingredients, adding salt and pepper. Add the dressing, mixing while shaking the bowl. Spread onto 2 rimmed baking sheets. Bake until the vegetables are tender and golden brown around the edges, about 35 minutes.
