Vegetable Stew with Wine

Ingredients

  • Courgette 25 oz
  • Onion 2 heads
  • Garlic 1 clove
  • Olive Oil 4 tablespoons
  • Pickled Chanterelles 5 oz
  • Chicken Broth 2 teaspoons
  • Dry White Wine 6 tablespoons
  • Crushed Tomatoes in Their Own Juice 15 oz
  • Chopped Sage Leaves 1 teaspoon
  • Parsley 1 bunch
  • Meyer Lemon Juice 1 tablespoon
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Wash the zucchini and cut into 5 mm thick slices, and dice the onion. Crush the garlic. Clean the mushrooms and slice them thickly.

Step 2

Sauté the zucchini, onion, and garlic in olive oil for 3 minutes.

Step 3

Drain the juice from the tomatoes and chop them roughly. Add them to the pan with the zucchini and pour in the juice.

Step 4

Add the mushrooms, wine, broth, oregano, and lemon juice to the vegetables. Simmer uncovered for 15 minutes, allowing excess liquid to evaporate.

Step 5

Wash and chop the parsley. Season the stew with pepper and sprinkle with parsley.

Step 6

Serve with pasta, rice, or crusty white bread.
