
Vegetable Stew with Sweet Potato

Ingredients
- Sweet Potato 1 piece
- Courgette 2 pieces
- Orange Bell Peppers 2 pieces
- Spanish onions 2 pieces
- Carrot 1 piece
- Fresh basil leaves to taste
- Dried Chamomile to taste
- Dried Rosemary to taste
- Soy Sauce 2 tablespoons
- Water 5 fl oz
- Olive Oil 5 fl oz
- Turmeric 1 tablespoon
- Tomatoes 2 pieces
- Courgette 1 piece
Step-by-Step Guide
Step 1
Heat a wok with olive oil.
Step 2
Dice the sweet potato and sauté it.
Step 3
Chop the carrot coarsely and add it to the wok.
Step 4
Chop the onion coarsely and add it to the wok.
Step 5
Chop the zucchini and cucumber coarsely, then add them to the wok.
Step 6
Chop the bell pepper coarsely and add it to the wok.
Step 7
Chop the tomato coarsely and add it to the wok — the tomato will release juice and the frying will turn into stewing.
Step 8
Add soy sauce and spices, and continue to stew.
