Ingredients
- Eggplants 2 pieces
- Courgette 2 pieces
- Orange Bell Peppers 2 pieces
- Spanish onions 1 head
- Soy Sauce 3 tablespoons
- Cucumbers 2 pieces
- Olive Oil 3 tablespoons
Step-by-Step Guide
Step 1
Slice the eggplants, zucchini, and cucumbers into circles about 0.5 cm thick. Cut the red onion and bell pepper into thin half-rings.
Step 2
In a well-heated skillet, pour in three tablespoons of olive oil, let it heat up, and add the vegetables. Stir constantly to prevent the vegetables from burning, and drizzle with soy sauce. 3-4 minutes will be enough; the vegetables should remain slightly undercooked.
Step 3
No need to add salt, as the soy sauce is already salty enough.
Step 4
Serve with a side of rice.
