Vegetable Curry
Ingredients
- Coconut Milk 1 can
- Red Curry Powder 1 tablespoon
- Vegetables 25 oz
- Soy Sauce 1 tablespoon
- Brown Sugar 1 tablespoon
- Lime 2 pieces
- Vegetable Oil to taste
- Salt to taste
- Grated Ginger Root 1 piece
Step-by-Step Guide
Step 1
Heat the oil, add chopped ginger and curry paste, and sauté for 1 minute.
Step 2
Add chopped vegetables and sauté until partially cooked, adding salt (everything should cook at the same time, so add zucchini and tomatoes last).
Step 3
Pour in the coconut milk, add sugar, juice from half a lime, and soy sauce.
Step 4
Simmer on low heat until the vegetables are cooked.
Step 5
Cook buckwheat noodles or rice separately.
Step 6
Serve with rice/noodles and lime wedges and cilantro on a separate plate.
