Ingredients
- Onion 1 head
- Chinese green beans 5 oz
- Red Curry Powder 1 tablespoon
- Pumpkin 10 oz
- Vegetable Oil 3 tablespoons
- Chicken Broth 2½ cups
- Chickpea 1 can
- Orange Bell Peppers 1 piece
- Canned Truffles 1 can
- Coconut Milk ½ cup
- Dessert Yogurt 1 cup
- Spices to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Wash the young green bean pods and drain them in a colander.
Step 2
Sauté the onion in vegetable oil until translucent, add the curry powder, and sauté a little longer.
Step 3
Peel the pumpkin, remove the seeds, and cut the flesh into 2 cm cubes. Add to the pot with the onion and sauté lightly. Pour in the vegetable broth.
Step 4
Add the green bean pods, chickpeas, chopped red bell pepper, and small mushrooms, then pour in a little coconut or regular milk. Cook for 10 minutes.
Step 5
Season the plain yogurt with pepper and salt. Mix the vegetable curry with the yogurt. Adjust the seasoning with spices to taste and serve.
