Vegetable casserole with couscous and mozzarella
Ingredients
- Couscous 5 oz
- Water 5 fl oz
- Olive Oil 1 tablespoon
- Eggplants 1 piece
- Courgette 2 pieces
- Passata Tomato Sauce to taste
- Melted Cheese 10 oz
Step-by-Step Guide
Step 1
Pour hot water over the couscous and add olive oil. Let it sit for 5 minutes, fluff with a fork, and add a little pepper.
Step 2
Slice the eggplant and zucchini lengthwise. Grill or sauté in oil.
Step 3
Layer in a baking dish, spreading tomato paste between each layer and adding pieces of mozzarella.
Step 4
Top with a layer of couscous and bake for 15–20 minutes.
