Description
A refined vegan twist on shawarma from the creators at the Vegan Corner in the Food Hall. It looks simple, but it is crafted with a clear understanding of flavor and balance: underneath the thin lavash lies fresh vegetables and sweet-and-sour pickles, while spicy red ajika adds a kick. The avocado not only acts as a creamy layer but also brings in the necessary dose of plant-based fats. The tofu is quickly fried to a golden crust before being added to the shawarma and complemented with hummus for its deceptive meatiness — resulting in something that, if not the exact replica of fried chicken, is very similar.
Ingredients
- Armenian Lavash 1 piece
- Romaine lettuce 0 oz
- Pickled Cauliflower 0 oz
- Cucumbers 0 oz
- Tomatoes 0 oz
- Sweet Pepper 0 oz
- Avocado flesh 0 oz
- Tofu 0 oz
- Vegetable Oil 0 fl oz
- Hummus 0 oz
- Adjika to taste
- Barbecue sauce to taste
Step-by-Step Guide
Step 1
Cut the tofu into large sticks.
Step 2
Lightly sauté the tofu cubes in vegetable oil.
Step 3
Cut the lavash sheet in half.
Step 4
Slice the fresh and pickled cucumbers into thin rounds.
Step 5
Slice the tomatoes into rounds.
Step 6
Cut the pepper into long strips.
Step 7
Cut the avocado flesh into sticks.
Step 8
On half of the lavash, place the sautéed tofu, lettuce, avocado, fresh and pickled cucumbers, tomatoes, and bell pepper. Drizzle with hummus and wrap the lavash like a shawarma. Prepare another shawarma in the same way.
Step 9
Grill the shawarma under a broiler or on a grill pan until you achieve nice grill marks.
Step 10
Cut each shawarma in half at a slight angle and serve with adjika and barbecue sauce.
