Ingredients
- Millet 5 oz
- Vegetable Broth 15 fl oz
- Instant Oats 0 oz
- Carrot 1 piece
- Parsley 0 oz
- Spinach 0 oz
- Onion 1 head
- Garlic 3 cloves
- Pine nuts 0 oz
- Sunflower Seeds 0 oz
- Flaxseed Meal 0 oz
- Tomato Paste 0 oz
- Vegetable Oil 0 fl oz
- Avocado 1 piece
- Soft tofu 5 oz
- Basil 0 oz
- Lemon Juice 0 fl oz
- Olive Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Pour the millet with vegetable broth, bring to a boil, and cook on low heat covered for 30–40 minutes.
Step 3
Grate the carrot on a fine grater, finely chop the onion and 2 cloves of garlic.
Step 4
Chop the parsley and spinach.
Step 5
Toast the pine nuts and sunflower seeds in a dry skillet until golden, stirring constantly.
Step 6
Heat the vegetable oil in a skillet and sauté the onion until translucent, then add the garlic and sauté for another minute.
Step 7
In a large bowl, combine the cooked millet, grated carrot, herbs, oats, pine nuts, sunflower seeds, sautéed onion with garlic, tomato paste, flaxseed meal, salt, and pepper.
Step 8
Slightly moisten your hands with cold water and form patties of the desired size from the mixture; you can use gloves.
Step 9
Heat oil in a large skillet and fry the patties on both sides until golden brown, then reduce the heat to low, cover with a lid, and wait 10 minutes for the patties to cook through.
Step 10
For the sauce, blend the avocado flesh, tofu, basil, remaining garlic, lemon juice, olive oil, salt, and pepper until a smooth creamy consistency is achieved.
Step 11
Serve the patties with the green sauce and any vegetable side dish, such as a salad.
