Description

Ingredients can be varied: use yellow onion instead of green, any tomatoes, any rice, any greens instead of spinach, yellow lentils instead of red.

Ingredients

  • Garlic 2 cloves
  • Green onions with bulbs 6 heads
  • Cherry Tomatoes 10 oz
  • Red Lentils 1 cup
  • Basmati rice 1½ cups
  • Canned chickpeas 2 cans
  • Coconut Milk 1 can
  • Curry Powder to taste
  • Lemon 1 piece
  • Spinach 2 bunches

Step-by-Step Guide

Step 1

Chop the onion, garlic, and tomatoes and sauté them in vegetable oil.

Step 2

Boil the salted red lentils.

Step 3

Combine the sautéed vegetables and lentils in a pan.

Step 4

Add the chickpeas.

Step 5

Pour in the coconut milk.

Step 6

Add curry powder to taste, about 1–2 tablespoons.

Step 7

Squeeze in the juice of one lemon.

Step 8

Add spinach, 2 bunches or enough to cover the pan in 1–2 layers, and simmer for 15–20 minutes.

Step 9

Meanwhile, cook the rice.

Step 10

Serve everything together.
