If you want something more like a soup, use more broth.
Ingredients
- Ground coriander 0 oz
- Chicken Broth 6 cups
- Onion 1 head
- Garlic 4 cloves
- Orange Bell Peppers 1 piece
- Carrot 2 pieces
- Rice 1½ cups
- Kale 5 oz
- Canned Pork with Beans 15 oz
- Butternut Squash 10 oz
- Passata Tomato Sauce 8 tablespoons
- Ocean salt to taste
Step-by-Step Guide
Step 1
In a large pot, pour half a cup of broth. Add chopped onion, garlic, cilantro, and pepper. Sauté over low heat for 10 minutes, stirring occasionally.
Step 2
Meanwhile, chop the remaining vegetables.
Step 3
Add the remaining broth, all the remaining vegetables, pinto beans, rice, and tomato paste to the pot. Season with salt. Bring to a boil, stirring regularly.
Step 4
When the mixture boils, reduce the heat, cover with a lid, and cook until done. Doneness is determined by the readiness of the rice.
