Veal Tongue Stew

Ingredients
- Veal tongue 2 pieces
- New Potatoes 0 lbs
- Tomatoes 2 pieces
- Carrot 1 piece
- Chicken Broth 15 fl oz
- Juniper Berries 10 pieces
- Cilantro to taste
- Salt to taste
- Sugar 2 teaspoons
- Garlic 4 cloves
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Boil the tongue until cooked.
Step 2
Cook the potatoes in chicken broth until tender.
Step 3
Grate the carrot.
Step 4
Finely chop the tomatoes, sprinkling them with salt and sugar.
Step 5
In a hot skillet, add half of the juniper berries, previously crushed with a knife.
Step 6
Add the grated carrot to the skillet and sauté until golden.
Step 7
Crush the garlic cloves with a knife and add to the mixture.
Step 8
Add the boiled potatoes, cut in half, and fry until golden.
Step 9
Add the tomatoes, mix, and let simmer for about 5 minutes.
Step 10
Meanwhile, in a separate skillet, fry the boiled tongue on both sides until golden, adding the remaining juniper berries (crushed).
Step 11
Serve the stew on a plate, placing the tongue on top and sprinkling with chopped cilantro.
