Veal Medallions with Guacamole Sauce
Ingredients
- Veal 20 oz
- Avocado ½ piece
- Orange Bell Peppers ½ piece
- Marinated cherries 5 pieces
- Onion ½ g
- TABASCO® to taste
- Herbs 1 bunch
- Lime 1 piece
- Salt to taste
- Spices to taste
- Safflower Oil 2 tablespoons
- Olive Oil 3 tablespoons
Step-by-Step Guide
Step 1
Let's start with the meat. I had three portioned pieces of veal. Gently pound them with the back of a knife. Rub with salt and spices (I only had black pepper and paprika). Drizzle with lime juice and one tablespoon of olive oil. Set aside while we prepare the sauce.
Step 2
Peel the avocado and cut it into small cubes. Do the same with the other vegetables: onion, pepper, tomatoes, and herbs (parsley/dill) to taste. Mix in a bowl with spices, salt, TABASCO (you can substitute with chili pepper), and olive oil. The guacamole is ready!
Step 3
Sear the meat in a hot skillet with vegetable oil until golden brown on each side.
Step 4
Place the meat on a warmed plate, add the guacamole sauce, and I also had some spicy nachos.
