Veal loin with grilled vegetables
Ingredients
- Pork tenderloin 15 oz
- Eggplants 1 piece
- Courgette 1 piece
- Spanish onions 1 head
- Orange Bell Peppers 1 piece
Step-by-Step Guide
Step 1
Brush the loin with olive oil and grill it on a hot grill (for 5 minutes on each side). Then grill the loin again on both sides so that the grill marks from the first grilling form a checkerboard pattern with the marks from the second grilling. Season the loin with salt and pepper.
Step 2
Slice the bell pepper into strips, and cut the other vegetables into rings about 1 cm thick. Grill them on both sides until partially cooked.
Step 3
Layer the vegetables in a round baking dish, seasoning with salt and sprinkling with grated Parmesan cheese. Bake in a convection oven for 10 minutes at 265°F.
