Ural Roast with Pickled Mushrooms

Ingredients
- Beef 0 lbs
- Pickled Chanterelles 5 oz
- Pork fat 5 oz
- Onion 2 heads
- Carrot 2 pieces
- Butter 0 oz
- Chicken Broth 1½ cups
- Sour Cream 5 oz
- Vinegar essence to taste
- Sugar to taste
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Rinse the piece of meat, pat it dry, slightly pound it, then stuff it with pieces of pork fat and rub it with salt.
Step 2
Peel, wash, and cut the onion and 1 carrot into large slices or rings.
Step 3
Sauté them together with the meat in a deep skillet with heated butter.
Step 4
Place the sautéed meat in a pot, add the coarsely chopped pickled mushrooms, sugar, peeled, washed, and grated raw carrot, and a crust of black bread.
Step 5
Pour in the broth, add boiling water if desired, and vinegar to taste.
Step 6
Put it in a preheated oven at 180–390°F for 1.5 hours.
Step 7
Serve with sour cream.
