Ukrainian Noodles
Ingredients
- Beef 20 oz
- Salad Potatoes 0 lbs
- Onion 1 head
- Carrot 1 piece
- Kefir ½ cup
- Wheat Flour to taste
- Activated Baking Soda ¼ teaspoon
- Salt to taste
- Garlic 3 cloves
- Parsley ½ bunch
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
First, as usual, I sautéed the onion with the carrot. I added the beef, cut into medium pieces, along with salt and pepper. I lightly browned it, added water, and simmered until cooked, remembering to add water when it evaporated... While the meat is simmering, let's prepare the noodles.
Step 2
Pour the kefir into a bowl, add baking soda and salt, and mix. Gradually add flour and stir. Use enough flour to make a dough that is not too stiff. Set the dough aside.
Step 3
The potatoes need to be fried separately. I had small potatoes, so I cut them into 4 pieces; smaller is not necessary. I didn't fry them until fully cooked.
Step 4
Now the meat is ready and well-simmered. Add the fried potatoes (you can also use raw, but fried tastes better), add water so that it doesn't completely cover the potatoes (but this is up to your preference—if you want it thinner, add more water; if you prefer it thicker, add less water).
Step 5
While the potatoes are cooking, let's prepare the noodles. For this, roll out the dough thinly, brush it with vegetable oil (I used the oil I fried the potatoes in), squeeze the garlic, spread it over the entire surface of the dough, and sprinkle with dill. Roll it up. Cut it into pieces about 1.5 cm wide.
Step 6
Once the potatoes are ready, place the noodles on top (if there's not enough water, add some, and taste; you may need to add salt). Cover with a lid and simmer on the lowest heat for about 15 minutes. The aroma will be so inviting that everyone will come running to the kitchen to see what you're cooking!
