Description
Kulesh is an ancient folk dish that combines a first and second course, resembling a thick soup made from grains and vegetables with a lard dressing. Kulesh was traditionally cooked over an open fire, and the recipe for kulesh mainly depended on the availability of ingredients.
Ingredients
- Millet ½ cup
- Salad Potatoes 6 pieces
- Lard 5 oz
- Onion 2 heads
- Celery salt 1 piece
- Carrot 1 piece
- Parsley 1 piece
- Water 0 qt
- Herbs to taste
- Bay leaf to taste
- Salt to taste
Step-by-Step Guide
Step 1
For the dressing, cut the lard into cubes about one cubic centimeter and lightly fry it with finely chopped onion.
Step 2
In boiling salted water, add coarsely chopped carrot and other roots and cook until partially cooked.
Step 3
Then add the potatoes, cut into sticks, and after 5–6 minutes, add the millet.
Step 4
When the grain is almost cooked, add the lard and onion dressing, bay leaf, herbs, and cook until ready.
