Ingredients

  • Cilantro ½ bunch
  • Udon Noodles 10 oz
  • Cucumbers 2 pieces
  • Tomatoes 2 pieces
  • Orange Bell Peppers 1 piece
  • Korean-style Carrots 10 oz
  • Scallions ½ bunch
  • Onion 1 head
  • Garlic 2 cloves
  • Vegetable Oil 5 fl oz
  • Coriander essential oil ½ tablespoon
  • Soy Sauce to taste

Step-by-Step Guide

Step 1

Cut the cucumbers, tomatoes, and seeded bell pepper into thin strips.

Step 2

Finely chop the green onion and cilantro.

Step 3

In a pot of boiling salted water, add the udon noodles and cook at a gentle boil for 8 minutes. Drain in a colander.

Step 4

Heat the vegetable oil in a skillet. Sauté the onion, sliced into thin half-rings, and minced garlic.

Step 5

In a large bowl, combine the chopped vegetables and herbs, Korean carrots, and noodles. Add the onion and garlic mixture from the oil, soy sauce to taste. Crush the coriander seeds slightly and add to the dish. Mix well with two forks.
