Description

Austrians also believe that a pig brings good luck. They even have a saying 'Schwein haben' (literally 'You have a pig'), which means 'You are lucky!'. In Austria, even strict vegetarians must eat a piece of pork on New Year's, which is why bakeries offer cookies and marzipan shaped like this piggy part. A special New Year's dish is prepared in Tyrol, known as 'cut soup,' which is not really a soup at all but rather a stew: pieces of pork, cheese, stale bread, fried onions, and everything is poured with broth. It is believed that the more ingredients in the dish, the better: the more abundance there will be in the new year.

Ingredients

  • Salad Potatoes 20 oz
  • Bacon 15 oz
  • Spanish onions 2 pieces
  • Ground Caraway 1 teaspoon
  • Paprika 1½ teaspoons
  • Parsley 1 bunch
  • Vegetable Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Wash the potatoes with a brush. Boil them in their skins until tender. Cool and cut.

Step 2

Heat vegetable oil in a skillet, fry the bacon and onions until golden brown. Transfer the onions and bacon to a plate.

Step 3

Place the potatoes in the skillet, fry until golden brown. Add caraway seeds and paprika, stir. Cook for another 2 minutes. Return the onions and bacon to the skillet. Mix well. Season with salt and pepper. Sprinkle with parsley and serve.
