Turnips in Béchamel Sauce
Ingredients
- Turnips 5 lbs
- Butter 0 oz
- Safflower Oil 2 tablespoons
- Wheat Flour 2 tablespoons
- Milk 15 fl oz
- Nutmeg a pinch
- Egg white 2 pieces
- Salt to taste
Step-by-Step Guide
Step 1
Wash and peel the turnips, then slice them. Bring salted water to a boil in a large pot, add the turnips, and cook for 10 minutes. Then drain the water.
Step 2
Melt the butter with the sunflower oil in a pot, stir in the flour, and cook for 2 minutes. Gradually pour in the milk while stirring constantly, and cook for another 5 minutes. Add salt, the turnips, and freshly grated nutmeg. Mix well and cook for 25 minutes until the turnips are tender.
Step 3
Beat the egg yolks and mix in a little of the liquid from the turnips, then add to the pot. Serve immediately.
