Turkish Eggplants
Ingredients
- Eggplants 6 pieces
- Tomatoes 2 pieces
- Ground meat 10 oz
- Onion 1 piece
- Garlic 2 cloves
- Paprika 1 teaspoon
- Sugar 1 tablespoon
- Salt a pinch
- Chicken Broth 10 oz
- Olive Oil 3 tablespoons
- Green peppercorns 1 piece
- Marinated cherries 5 oz
Step-by-Step Guide
Step 1
Peel the eggplants in stripes.
Step 2
Soak in salted water for 20 minutes.
Step 3
Heat a skillet with olive oil. Sauté the garlic for 2 minutes. Add the onion and cook for 5 minutes. Add the ground meat and cook for 8 minutes.
Step 4
Season with salt and pepper.
Step 5
Add paprika and broth, simmer on low heat for 5–10 minutes.
Step 6
Add the tomatoes and cook for 2 minutes.
Step 7
Drain the meat mixture in a colander and let the sauce drain.
Step 8
In another skillet, fry the eggplants and place them on a paper towel.
Step 9
Cut slits in the eggplants and place them in a baking dish.
Step 10
Sprinkle the openings with sugar and stuff with the meat mixture.
Step 11
Garnish with a piece of pepper and tomato, pour the sauce around the eggplants, and bake for 30 minutes at 355°F in a preheated oven.
