Turkey with chestnuts
Ingredients
- Chicken fillet 0 lbs
- Peeled chestnuts 20 pieces
- Onion 1 head
- Carrot 1 piece
- Olive Oil 2 spoons
- Red Grape Juice 2 glasses
- Tomatoes 2 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Make a crosswise cut on the blunt side of each chestnut. Drop them into boiling water, cook for ten minutes, and then peel off the skin.
Step 2
Finely chop the onion and grate the carrot on a coarse grater. Heat the oil in a saucepan, add the vegetables, and sprinkle in two pinches of salt and one pinch of pepper. Sauté the vegetables lightly, then pour in the wine and simmer until the wine has evaporated.
Step 3
Place the turkey in the same saucepan, pour in two cups of water, and simmer for fifteen to twenty minutes. Then add the chestnuts to the saucepan and continue to simmer for another forty-five minutes.
Step 4
Remove the chestnuts from the saucepan, mash them with a fork into a coarse puree, and thoroughly mix with the sauce left from their cooking.
Step 5
Make a cross-shaped incision on the tomatoes, then immerse them in boiling water for half a minute and remove the skin. Cut the tomatoes in half, scoop out the seeds, and chop the remaining flesh coarsely. Sauté the pieces in vegetable oil until tender, then mix with the chestnuts. Serve with slices of turkey.
