Step 1
Make incisions, blanch, and peel the chestnuts; boil them in broth until partially cooked. Soak a large piece of pork fat in water. Drain the chestnuts, place them on the pork fat, and roll them into a log. Place this log inside the turkey weighing 1.5 kg. Sew the opening shut.
Step 2
Surround the bird with strips of fat, tie it up, and roast in an oven preheated to 390°F for 60 to 80 minutes.
Step 3
Shortly before the cooking is finished, remove the fat to create a golden crust. Strain the juices from the roast and remove the fat. Serve the turkey with this juice.
