Ingredients

  • Peanut Sprouts 5 oz
  • Mango 1 piece
  • Turkey Escalopes 20 oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Grated Ginger Root to taste
  • Red Curry Powder 1 tablespoon
  • Vegetable Oil 2 tablespoons
  • Sour Cream 5 oz
  • Clear Apple Juice 5 fl oz
  • Kiwi 1 piece
  • Chopped almonds 2 tablespoons

Step-by-Step Guide

Step 1

Blanch the soy sprouts for 2 minutes. Cut the flesh from the mango pit into slices. Set aside 8 slices, and finely chop the rest.

Step 2

Season the escalopes with salt, pepper, and ginger. Place the mango slices and soy sprouts on the meat. Roll into small rolls, secure, and fry in oil. Remove the rolls.

Step 3

Add curry, sour cream, a pinch of ginger, and chopped mango to the remaining fat in the pan. Pour in the apple juice and bring to a boil.

Step 4

Place the rolls in the sauce, simmer for 15 minutes, then remove. Puree the sauce, season, and add kiwi slices. Slice the rolls and garnish with almonds.
