Description
Turkey pairs wonderfully with lamb — it softens its strong flavor and balances its richness. They should always come together like this. You can't whip up this roll on a whim, but if you have a couple of free hours, go ahead and start!
Ingredients
- Turkey 5 lbs
- Pork Mince 0 lbs
- Potato 20 oz
- Carrot 20 oz
- Onion 3 heads
- Garlic 4 cloves
- Black Cumin (Cumin) 1 tablespoon
- Olive Oil 0 fl oz
- Butter 0 oz
- Cinnamon a pinch
- Grated Ginger Root a pinch
- Parsley 0 oz
- Cilantro 0 oz
- Breadcrumbs 5 oz
- Thyme 6 stalks
- Dried Rosemary 1 tablespoon
- Dried Rosemary 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Remove the backbone from the turkey by cutting out the spine and bones from the thighs and drumsticks with a sharp, thin knife. Season with salt and pepper, place it skin-side down on a cutting board, and sprinkle with dried oregano and mint.
Step 2
In olive oil, sauté the finely chopped onion with minced garlic until soft, then add the ground meat, cumin, ginger, and cinnamon, and cook, stirring, until done. Season with chopped parsley, cilantro, and breadcrumbs to absorb the juices.
Step 3
Place the filling on the turkey meat, roll it up, and tie it with kitchen twine. Transfer it to a baking sheet, cover with foil, and place it in an oven preheated to 390°F.
Step 4
After an hour, place the chopped carrots, onions, and potatoes on a baking sheet, sprinkle with thyme, drizzle with the turkey juices, and roast for another 40 minutes.
